GOOD Bites: For the Love of Tahini

Raise your hand if you’ve been spending a lot more time in the kitchen over these last few months. Sick of banana bread yet? Us, too.

GOOD news: one of our favorite pantry staples brand, Soom Foods, has given us a little sneak peek into their forthcoming cookbook, The Tahini Table. Penned by company CEO and co-founder, Amy Zitelman, the collection of 100 delicious recipes showcases the diverse range of sweet and savory applications that tahini can offer.

Not yet hip to this “cult condiment”? Oh, we got you.

Tahini, made from pressed, roasted sesame seeds, is nutritious, vegan, dairy-free, gluten-free, and nut-free superfood rich in Omega 6 fatty acids, with plant-based protein, iron, and calcium. It is beyond versatile (chocolate sweet tahini, yes please!) in the kitchen.

Maple Tahini Granola (from The Tahini Table)

V, DF, GF, FF 

  • 2 cups old-fashioned oatmeal

  • 1/2 cup sliced almonds

  • 1/2 cup walnut pieces

  • 1/2 cup white sesame seeds

  • 1/2 teaspoon ground cinnamon

  • Large pinch fine sea salt

  • 6 tablespoons pure maple syrup

  • 1/4 cup Soom Tahini

  • 2 tablespoons coconut or nut oil

  • 1/2 cup chopped dried apples, apricots, or raisins

  1. Turn the oven to 250ºF.

  2. Mix the oatmeal, almonds, walnuts, sesame seeds, cinnamon, and salt in a large bowl. Mix the maple syrup, tahini, and oil in a small bowl, then pour over the oat mixture. Toss until everything is well coated.

  3. Scrape onto a rimmed sheet pan with a silicone spatula. Pack into an even layer. Bake until the granola is golden, about 40 minutes, flipping and flattening with the spatula halfway through.

  4. Set aside to cool. Break the granola into chunks and toss with the dried fruit.

  5. Store in a tightly closed container at room temperature for up to 3 weeks.
